Ingredients
- One salmon fillet, cooked
- 2 medium sweet potatoes, peeled, cooked and mashed (alternatively use new potatoes or a tin of white beans)
- 2 spring onions, finely chopped
- Fresh dill, finely chopped (optional)
- Olive oil spray for frying
- 1 tbsp reduced fat crème fraiche or low fat cream cheese
Method
1. Mix all of the ingredients together in a large bowl.
2. Shape the mixture into large patties and chill in the fridge for 30 minutes.
3. Heat a large frying pan or griddle pan and spray with oil spray.
