Salmon and sweet potato fishcakes

Ingredients

  • One salmon fillet, cooked
  • 2 medium sweet potatoes, peeled, cooked and mashed (alternatively use new potatoes or a tin of white beans)
  • 2 spring onions, finely chopped
  • Fresh dill, finely chopped (optional)
  • Olive oil spray for frying
  • 1 tbsp reduced fat crème fraiche or low fat cream cheese

Method

1. Mix all of the ingredients together in a large bowl.

2. Shape the mixture into large patties and chill in the fridge for 30 minutes.

3. Heat a large frying pan or griddle pan and spray with oil spray. 

4. Cook on a medium heat for 3-4 minutes on each side until golden brown and heated through.

Serve with a large portion of green salad or veg.
